Apple Meringue Pies

Method

  1. Cut the apple slices in smaller pieces. Stir in the mincemeat.
  2. Beat the egg yolks, add to the apple and set aside.
  3. Heat the oven to 200° C.
  4. Cut the bread into 7,5 cm squares,lightly press down using a rolling pin. Brush lightly with butter and then press into a muffin pan cavities. Bake in the oven for 7 – 9 minutes until crisp.
  5. Remove from the oven. Allow to cool, then brush with apricot jam. Spoon the apple filling into the bread baskets.
  6. Reduce the oven temperature to 180° C and return the baskets to the oven for another 5 minutes.
  7. Meanwhile whisk the egg white until stiff, gradually adding the castor sugar and whisk until glossy and standing peaks.
  8. Remove the apple baskets from the oven, swirl over the meringue onto each filling then return to the oven for 8 minutes until golden brown.
  9. Serve straight away when hot or warm and while the bread is crisp.

  • 12 slices Sasko Everyday Premium White, crusts removed
  • 1 tin Pie apples (385g)
  • 115 g Bottled fruit mincemeat
  • 25 ml Apricot jam, smooth
  • 50 g Butter, melted
  • 2 Eggs, separated
  • 100 g Castor sugar
