Chocolate Bread & Butter Pudding

Method

  1. Preheat oven to 180 ° C.
  2. Lightly grease ovenproof baking dish.
  3. Melt the chocolate with 25g of the butter in a heatproof bowl set over a pot of simmering water.
  4. Arrange 3/4 quantity of the bread triangles (overlapping) in the prepared dish.
  5. Spread half of the melted chocolate mixture on bread slices.
  6. Sprinkle with half the quantity raisins & nuts.
  7. Repeat with a layer of bread and raisin & nut sprinkling.
  8. Arrange the remaining bread triangles on top.
  9. Spread with the remaining chocolate mixture.
  10. Melt the remaining butter.
  11. Remove from the heat and add vanilla, cinnamon, eggs, sugar and milk.
  12. Beat thoroughly and pour over the bread.
  13. Leave to stand for 30 minutes before baking.
  14. Bake for approximately 45 minutes or until the custard is set and the bread a golden brown colour.
  15. Leave to stand for 5 minutes.
  16. Dust with cocoa powder and icing sugar before serving.
  17. Serve with warm custard, thick cream or ice cream.

Ingredients

  • 200g Plain dark chocolate, in pieces
  • 90g Butter
  • 6 Slices Sasko Everyday Select White (slices cut into 4 triangles)
  • 50g Seedless raisins
  • 50g Roasted macadamia nuts, chopped
  • 5ml Vanilla essence
  • 2,5ml Cinnamon
  • 3 Eggs
  • 25g Castor sugar
  • 600ml Milk
  • Cocoa powder & icing sugar for dusting
