Chicken & Avocado Roll
Method
- Prepare the mango salsa by finely chopping the mango, pepper, onion, chilly, garlic and tomatoes. Mix well.
- Mix the lemon juice, coriander, basil, olive oil and honey into the above mixture. Leave to stand for 30 minutes to rest.
- Make a slit length wise in the upper crust of the roll. Force open, to allow a pocket to form. Spread the inside lightly with margarine or butter.
- Lay a bed of lettuce on the base of the roll. Spread with a little salsa.
- Lay sliced chicken breasts thinly on top of the lettuce.
- Lay avocado chunks alternately with chicken.
- Drizzle the mango salsa along the top.

- 6 Sasko Jumbo Sesame Roll
- Margarine or butter for spreading
- 6 Lettuce leaves
- 3 Chicken breasts, grilled and thinly sliced
- 2 Avocado’s, cut into chunks
Mango Salsa
- ½ Mango
- ½ Red pepper
- ½ Eggs Red onion
- ½ Green chilli
- 1 clove Garlic, crushed
- 2 Tomatoes
- 25 ml Lemon juice
- 15 ml Coriander, fresh
- 15 ml Basil, fresh
- 30 ml Olive oil
- 15 ml Honey
