Coronation Chicken Sandwich
Method
- Cut the grilled chicken breasts into thin slices.
- Mix the curry powder and mayonnaise together. Add to the chicken and blend.
- Chop the spring onions finely and add to the chicken.
- Slice the apricots thinly and add to the mixture. Mix thoroughly.
- Lightly butter the bread slices on both sides.
- Lay the lettuce on half the slices of bread. Top generously with the filling.
- Top with the remaining slices of bread. Cut into triangles and serve.

- 6 slices Sasko Crushed Wheat & Bran
- 60 ml Butter or margarine, for spreading
- 2 Chicken breasts, grilled
- 45 ml Mayonnaise
- 1 tin Apricots (410g)
- 10 ml Curry powder
- 2 Spring onions
- 6 Lettuce leaves
