Coronation Chicken Sandwich

Method

  1. Cut the grilled chicken breasts into thin slices.
  2. Mix the curry powder and mayonnaise together. Add to the chicken and blend.
  3. Chop the spring onions finely and add to the chicken.
  4. Slice the apricots thinly and add to the mixture. Mix thoroughly.
  5. Lightly butter the bread slices on both sides.
  6. Lay the lettuce on half the slices of bread. Top generously with the filling.
  7. Top with the remaining slices of bread. Cut into triangles and serve.

  • 6 slices Sasko Crushed Wheat & Bran
  • 60 ml Butter or margarine, for spreading
  • 2 Chicken breasts, grilled
  • 45 ml Mayonnaise
  • 1 tin Apricots (410g)
  • 10 ml Curry powder
  • 2 Spring onions
  • 6 Lettuce leaves
