Layered Tuna Bread Bake
Method
- Sauté onion in oil for approximately 8 minutes until translucent.
- Add garlic and sauté for another minute.
- Add peppers and sauté for 10 minutes.
- Add tomato and sauté for 5 minutes.
- Add tuna and sauté for 2 minutes.
- Add seasoning.
- Beat together the eggs with the milk and keep aside.
Assembling
- Line ovenproof dish with 2 1/2 slices of bread.
- Spoon one third of tuna mix over.
- Top with another 2 1/2 slices of bread.
- Spoon one third of tuna mix over.
- Top with remainder of bread, followed by the remainder of tuna mix.
- Beat egg and milk together and pour over.
- Leave to stand for 5 minutes.
- Bake at 180° C for 20 – 30 minutes until egg is set.
- Serve as slices with a side salad.
Hint
- *Should another dish be used, 2 layers can be assembled instead of 3.

- 1 medium Onion, thinly sliced
- 1 clove Garlic
- 25ml Olive oil or vegetable oil
- 1 medium Red pepper, sliced
- 1 medium Yellow pepper, sliced
- 1 tin Peeled & Chopped Tomatoes (400g)
- 1 tin Tuna chunks, drained
- 5ml Salt
- 5ml Parsley, chopped
- 7 slices Sasko Everyday White, crusts removed, sliced in half
- 3 Eggs, large
- Milk
- 75ml Black Pepper to taste
