Layered Tuna Bread Bake

Method

  1. Sauté onion in oil for approximately 8 minutes until translucent.
  2. Add garlic and sauté for another minute.
  3. Add peppers and sauté for 10 minutes.
  4. Add tomato and sauté for 5 minutes.
  5. Add tuna and sauté for 2 minutes.
  6. Add seasoning.
  7. Beat together the eggs with the milk and keep aside.

Assembling

  1. Line ovenproof dish with 2 1/2 slices of bread.
  2. Spoon one third of tuna mix over.
  3. Top with another 2 1/2 slices of bread.
  4. Spoon one third of tuna mix over.
  5. Top with remainder of bread, followed by the remainder of tuna mix.
  6. Beat egg and milk together and pour over.
  7. Leave to stand for 5 minutes.
  8. Bake at 180° C for 20 – 30 minutes until egg is set.
  9. Serve as slices with a side salad.

Hint

  1. *Should another dish be used, 2 layers can be assembled instead of 3.

Ingredients

  • 1 medium Onion, thinly sliced
  • 1 clove Garlic
  • 25ml Olive oil or vegetable oil
  • 1 medium Red pepper, sliced
  • 1 medium Yellow pepper, sliced
  • 1 tin Peeled & Chopped Tomatoes (400g)
  • 1 tin Tuna chunks, drained
  • 5ml Salt
  • 5ml Parsley, chopped
  • 7 slices Sasko Everyday White, crusts removed, sliced in half
  • 3 Eggs, large
  • Milk
  • 75ml Black Pepper to taste
