Oriental chicken sandwich with avocado

Method

  1. Whip marinade ingredients together with a whisk and marinade chicken strips for at least 1 hour.
  2. Cook the chicken in olive oil using a griddle pan.
  3. Season the mashed avocado with salt, pepper and lemon juice.
  4. Take 2 slices of bread and spread the avocado mash thickly.
  5. Place a layer of chicken strips on both slices, top with shredded cabbage and grated carrots.
  6. Close sandwiches with the remaining slices.

Ingredients

  • 8 slices Sasko Low GI Soy & Linseed
  • 4 chicken breasts, cut into strips or cubes
  • 20ml olive oil
  • 2 ripe avocados, mashed
  • 2 large carrots, grated
  • ¼ red cabbage, shredded
  • juice from half a lemon
  • salt and pepper, to taste

Chicken marinade

  • 50ml olive oil
  • 20ml honey
  • 30ml sweet soy sauce
  • 15ml chopped coriander
  • 30ml sweet chilli sauce
  • salt and pepper to sauce
