Oriental chicken sandwich with avocado
Method
- Whip marinade ingredients together with a whisk and marinade chicken strips for at least 1 hour.
- Cook the chicken in olive oil using a griddle pan.
- Season the mashed avocado with salt, pepper and lemon juice.
- Take 2 slices of bread and spread the avocado mash thickly.
- Place a layer of chicken strips on both slices, top with shredded cabbage and grated carrots.
- Close sandwiches with the remaining slices.
Ingredients
- 8 slices Sasko Low GI Soy & Linseed
- 4 chicken breasts, cut into strips or cubes
- 20ml olive oil
- 2 ripe avocados, mashed
- 2 large carrots, grated
- ¼ red cabbage, shredded
- juice from half a lemon
- salt and pepper, to taste
Chicken marinade
- 50ml olive oil
- 20ml honey
- 30ml sweet soy sauce
- 15ml chopped coriander
- 30ml sweet chilli sauce
- salt and pepper to sauce
