Roast chicken with tangy mayonnaise sandwich
Method
- Mix all ingredients together and season with salt and pepper.
- Thickly spread the chicken mix on three slices and cover with the remaining slices.
- Slice sandwich as desired.
- As a canapé, cut bread into triangles, toast lightly. Place rocket leaf, top with the chicken filling and garnish with sliced coriander leaf.

- 3 roasted chicken breasts, shredded
- ¼ red pepper, very finely chopped
- ¼ green pepper, very finely chopped
- 30ml onions, finely chopped
- 15ml coriander, finely chopped
- 70ml tangy mayonnaise
- salt and pepper to taste
