Spicy Chicken & Olive Sandwich

Method

  1. Mix together yoghurt, mayonnaise, curry powder and chutney.
  2. Add the chicken and olives and mix.
  3. Butter 4 slices on one side and pile half of the filling onto these slices.
  4. Add sprigs of watercress and some rocket leaves. Repeat with the next 4 slices.
  5. Cover with the last 4 slices of bread to create a three-layered stack.

  • 12 slices Sasko Low GI Seeded Brown
  • 30 ml Yoghurt, low fat
  • 30 ml Mayonnaise
  • 2 ml Mango chutney
  • 200 g Chicken, cooked, thinly sliced
  • 10 Olives, pitted and sliced
  • Butter of margarine for spreading
  • Watercress sprigs
  • Rocket leaves
