Thai beef sandwich with rocket and cashew nuts

Method

  1. Whip marinade ingredients together with a whisk, cut beef into thin slices and marinade for at least 1 hour.
  2. Cook beef on a griddle pan until cooked and set aside.
  3. Take two slices of bread and spread with tzatiki.
  4. Place rocket on each slice, top with carrots, bean sprouts and beef slices. Sprinkle with lightly chopped cashew nuts.
  5. Cover with the remaining slices and serve as desired.

Ingredients

  • 4 slices Sasko Low GI Oats & Honey
  • 250g beef fillet or rump steak, thinly sliced
  • 2 large carrots, grated
  • 1 packet of rocket
  • 1 packet of bean sprouts
  • 1 tub tzatziki
  • 50g cashew nuts, lightly chopped

Beef marinade

  • 50ml olive oil
  • 20ml honey
  • 30ml sweet soy sauce
  • 10ml crushed ginger
  • 1 tsp chillies, chopped
  • 15ml coriander, chopped
  • 30ml sweet chilli sauce
  • salt and pepper to taste
