Thai beef sandwich with rocket and cashew nuts
Method
- Whip marinade ingredients together with a whisk, cut beef into thin slices and marinade for at least 1 hour.
- Cook beef on a griddle pan until cooked and set aside.
- Take two slices of bread and spread with tzatiki.
- Place rocket on each slice, top with carrots, bean sprouts and beef slices. Sprinkle with lightly chopped cashew nuts.
- Cover with the remaining slices and serve as desired.
Ingredients
- 4 slices Sasko Low GI Oats & Honey
- 250g beef fillet or rump steak, thinly sliced
- 2 large carrots, grated
- 1 packet of rocket
- 1 packet of bean sprouts
- 1 tub tzatziki
- 50g cashew nuts, lightly chopped
Beef marinade
- 50ml olive oil
- 20ml honey
- 30ml sweet soy sauce
- 10ml crushed ginger
- 1 tsp chillies, chopped
- 15ml coriander, chopped
- 30ml sweet chilli sauce
- salt and pepper to taste
