Thai Chicken Sandwich
Method
- Mix together all the ingredients for the Thai salsa. Put aside and allow to rest.
- Spread all the slices of bread using the butter or margarine.
- Add a layer of lettuce on the buttered sides of 4 slices
- Place the chicken slices on top of the lettuce.
- Add a spoonful of salsa and cover with the remaining four slices of bread.
- Cut into halves and serve.
Ingredients
- 8 slices Sasko Low GI True Whole Wheat
- 30 ml Butter or margarine for spreading
- 4 – 6 Lettuce leaves
- 170 g Chicken breasts, cooked, thinly sliced
Thai Salsa
- ½ Red pepper, chopped
- 30 ml Coriander, fresh and chopped
- ½ Lemon rind, grated
- 60 ml Yoghurt, low fat
