Thai Chicken Sandwich

Method

  1. Mix together all the ingredients for the Thai salsa. Put aside and allow to rest.
  2. Spread all the slices of bread using the butter or margarine.
  3. Add a layer of lettuce on the buttered sides of 4 slices
  4. Place the chicken slices on top of the lettuce.
  5. Add a spoonful of salsa and cover with the remaining four slices of bread.
  6. Cut into halves and serve.

Ingredients

  • 8 slices Sasko Low GI True Whole Wheat
  • 30 ml Butter or margarine for spreading
  • 4 – 6 Lettuce leaves
  • 170 g Chicken breasts, cooked, thinly sliced

Thai Salsa

  • ½ Red pepper, chopped
  • 30 ml Coriander, fresh and chopped
  • ½ Lemon rind, grated
  • 60 ml Yoghurt, low fat
