Chicken Fillets With Macadamia Crust

Method

  1. Mix salt with flour. Beat egg.
  2. Combine macadamia nuts and bread crumbs.
  3. Dust chicken strips with flour, dip it in egg mixture and coat it in the combined nuts and bread crumbs.
  4. Refrigerate for at least 30 minutes before cooking.
  5. Heat oil in pan.
  6. Fry for approximately 1-2 minutes per side until the chicken is cooked.
  7. Drain on kitchen paper and serve warm.
  8. Serve with fruit chutney or sweet chilli as a dipping sauce as a cocktail snack or serve with stir fried vegetables as a light meal.

  • 250ml Sasko Low GI White crumbs
  • 400g Chicken breast fillets, sliced into strips
  • 125ml Flour
  • 5ml Salt
  • 1 Egg, large
  • 125ml Macadamia nuts, chopped
  • Vegetable oil for frying
