Roasted Tomato, Mozzarella Cheese And Basil Crostini’s
Method
Roasted Tomatoes
- Preheat oven to 160° C.
- Place tomatoes on baking sheet. Drizzle with olive oil and balsamic vinegar.
- Roast in oven for 30 minutes until the tomatoes become soft.
- Remove from baking sheet and drizzle with pan juices.
- Keep until crostini assembling.
Crostini’s
- Preheat oven grill.
- Slice bread into 4 squares. Place onto baking sheet.
- Grill until golden brown. Brush with olive oil.
- Turn around and grill other side till golden brown. Brush with olive oil.
- Remove from baking sheet and let it cool on cooling rack.
Assembling
- Square brown bread crostini, slice mozzarella cheese, 2 x roasted tomatoes and a fresh basil leaf for garnish (optional).

- 100 g Mini Rosa tomatoes
- 30 ml Olive oil
- 10 ml Balsamic vinegar
- 8 slices Mozzarella cheese
- 8 Fresh basil leaves (optional)
Crostini’s
- 84 slices Sasko Dumpy Brown
- Olive oil for brushing
