Vegetarian Kebabs
Method
- Preheat oven to 220° C.
- Prepare two sandwiches using the bread, butter and cheddar cheese. Remove crusts and cut each sandwich into 6 small cubes.
- Cut the peppers, onion and courgettes into chunks. Place into a plastic bag with all the other vegetables and add half the oil. Toss together.
- Thread each skewer with pieces of vegetables and bread cubes. Scatter over the herbs. Drizzle with the remaining oil. Season to taste.
- Bake for approximately 20 minutes or until the vegetables are charred on the edges and the bread is toasted.
- Serve straight away.
Ingredients
- 4 slices Sasko All in One White
- 40 ml Butter or margarine for spreading
- 2 slices Cheddar cheese
- 8 – 12 Wooden skewers, soaked in water (alternatively use Rosemary twigs)
- ½ Red pepper
- ½ Yellow pepper
- 2 Spring onions
- 2 Courgettes
- 125 g Mushrooms
- 24 Cherry tomatoes
- 30 ml Olive oil
- 10 ml Italian herbs, dried
- Salt and pepper to taste
