Vegetarian Kebabs

Method

  1. Preheat oven to 220° C.
  2. Prepare two sandwiches using the bread, butter and cheddar cheese. Remove crusts and cut each sandwich into 6 small cubes.
  3. Cut the peppers, onion and courgettes into chunks. Place into a plastic bag with all the other vegetables and add half the oil. Toss together.
  4. Thread each skewer with pieces of vegetables and bread cubes. Scatter over the herbs. Drizzle with the remaining oil. Season to taste.
  5. Bake for approximately 20 minutes or until the vegetables are charred on the edges and the bread is toasted.
  6. Serve straight away.

Ingredients

  • 4 slices Sasko All in One White
  • 40 ml Butter or margarine for spreading
  • 2 slices Cheddar cheese
  • 8 – 12 Wooden skewers, soaked in water (alternatively use Rosemary twigs)
  • ½ Red pepper
  • ½ Yellow pepper
  • 2 Spring onions
  • 2 Courgettes
  • 125 g Mushrooms
  • 24 Cherry tomatoes
  • 30 ml Olive oil
  • 10 ml Italian herbs, dried
  • Salt and pepper to taste
